Please welcome Che Cavolo, the pizza that just made Alessandro Romanelli our first ever two-time Doughdown champion.

The Doughdown is our annual chef competition, where pizzaiolos from every pizzeria create a pizza inspired by themselves and battle it out for a place on the menu nationwide. This year, Alessandro's kale-topped creation, inspired by his Italian roots, took the crown.

The Che Cavolo: Cream of kale base, guanciale, fresh burrata, crushed toasted panko and a lemon & olive oil emulsion.

Translation: "che cavolo" is Italian for "what the heck!", and literally means cabbage. Alessandro leaned into both, putting kale centre stage in the boldest, most comforting way.
