Carlo’s leading Napoli’s new-school pizza movement, known for his obsession with bold colours, seasonal ingredients and massive flavour. His guest pizza, Pizza Veloute, is a total showstopper: purple potato purée, guanciale, basil leaves and creamy fior di latte. It’s a slice of Southern Italy like you’ve never tasted – seriously delicious.
